Spaghetti Carbonara

Lentil stew



I use quite a lot of lentils when I cook. Here is a lentil stew which I made basically using what I had at home this day :-)

Lentil stew



1 yellow onion

2 garlic cloves

olive oil

1 teaspoon pesto

3 dl water

250 grams of crushed tomatoes

1 dl red lentils

1 stock cube

1 dl Kidney beans

1 fist broccoli bouquets

1 lemon



Chop one yellow onion and two garlic cloves and fry in oil together with one teaspoon pesto.

Add 3 dl water, 250 grams of crushed tomatoes, 1 dl red lentils and a stock cube. Let boil for about 20 minutes until the lentils are soft.

Towards the end, add 1 dl Kidney beans and a fist of broccoli bouquets and a little squeezed lemon juice.

Serve with bean pasta and sweet corn.
